Necessary Materials
Before you begin, make sure you have the following:
- A V60 and paper filters
- Specialty coffee from Cafeto de Villa, medium-fine ground (similar to the texture of table salt)
- A scale to measure coffee and water
- A kettle, preferably with a gooseneck for precise pouring
- Filtered water
- A jug or cup to collect the coffee
- A spoon for stirring
Steps to Prepare Coffee in a V60
1. Prepare the Equipment
Place the V60 over your carafe or mug. Insert a paper filter into the V60 and rinse it with hot water to remove any papery taste and to warm up the V60 and carafe. Discard the rinse water.
2. Measure and Grind the Coffee
The recommended ratio is 1 gram of coffee for every 16 grams of water. For a 250 ml cup of coffee, use 15-16 grams of coffee. Grind the beans just before brewing for the best flavor.
3. Heat the water
Heat filtered water to a temperature of 90-96°C. If you don't have a thermometer, allow the water to boil and then wait about 30 seconds before using.
4. Add the Ground Coffee
Place the ground coffee into the paper filter, making sure it is level. You can tap the V60 lightly to settle the coffee.
5. Perform the Preinfusion
Pour a small amount of hot water (about twice the weight of the coffee) over the ground coffee, making sure to moisten the entire coffee evenly. Wait about 30-45 seconds to allow the coffee to degas and release its aroma.
6. The Dumping Continues
After pre-infusion, begin pouring the water in circular motions, starting from the center and moving outward, then returning to the center. Maintain a steady flow and avoid pouring directly onto the edges of the filter.
7. Maintain the Water Level
Continue pouring the water in intervals, allowing the water level to drop before adding more. The goal is to keep the coffee bed evenly saturated without letting it dry out completely.
8. Complete the Preparation
Continue pouring until you have added the desired amount of water. The entire pouring process should take about 3-4 minutes for optimal extraction.
9. Serve and Enjoy
Remove the V60 and filter from the carafe or cup. Give your brewed coffee a little swirl to mix the flavors before serving. Enjoy your freshly brewed coffee!
